Protein Boost Crepes

Makes approximately 9 crepes

Ingredients
  • ¼ cup vanilla protein powder
  • 1 cup wholemeal flour
  • 2 large eggs
  • 1¾ cup soy milk
  • 1 tbsp honey
To serve: Fresh fruits of choice
Method
Cooking
  1. 1In a bowl, combine all dry ingredients with the wet ingredients. Hand whisk until the batter is smooth and lump-free.
  2. 2Lightly drizzle olive oil into a pan and heat over medium.
  3. 3Pour about ⅓ cup of batter into the pan for each crepe.
  4. 4Cook until lightly golden, then flip and cook the other side.
Storage
  1. 1Refrigerate in an airtight container for up to 3 days.
  2. 2Or freeze in a zip-lock bag, separating each crepe with baking paper.
Reheat
  1. 1Microwave for 40–60 seconds until warmed through.
