Protein Boost Crepes
Makes approximately 9 crepes

Ingredients
¼ cup vanilla protein powder
1 cup wholemeal flour
2 large eggs
1¾ cup soy milk
1 tbsp honey
To serve: Fresh fruits of choice
Method
Cooking

In a bowl, combine all dry ingredients with the wet ingredients. Hand whisk until the batter is smooth and lump-free.

Lightly drizzle olive oil into a pan and heat over medium.

Pour about ⅓ cup of batter into the pan for each crepe.

Cook until lightly golden, then flip and cook the other side.
Storage

Refrigerate in an airtight container for up to 3 days.

Or freeze in a zip-lock bag, separating each crepe with baking paper.
Reheat

Microwave for 40–60 seconds until warmed through.
